Fall & Pumpkin Time

I Love FALL
I started looking for pumpkin & apple recipes a couple of weeks ago.
Bought some pumpkin for cookies a few days ago.
Tried a new recipe yesterday:
Pumpkin Butter!!

It is sooooooo yummy.
I can't stop eating it!!!!!!!!!
Can't stop thinking of all the ways to use it...
...Top toast, muffins, crumpets,
ice cream topping, frosting, cake filling,
cheese cake, pancake topping ---
---share with the neighbors.

Here's the recipe.


Pumpkin Butter


· 1 (29 ounce) can pumpkin puree

· 3/4 cup apple juice

  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1 1/2 cups white sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg

DIRECTIONS

  1. Combine pumpkin, apple juice, spices, and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently.
  2. Transfer to sterile containers and chill in the refrigerator until serving.

*I substituted sugar with ½ cup unpacked brown sugar and 1 tsp stevia. I also used 1 cup more apple juice (from frozen concentrate) and only added 1/3 of water when I reconstituted.


Got to go now -- to have some toast with pumpkin butter.

Celebrating A 7th Wedding Anniversary






We don't know what our mom & dad did to celebrate but we ate french fries & played.





We had a tea party with B-crumpets, beetles (M&M's), pasties & of course tea -- mostly peppermint and ginger!!!

Don't forget to hold your pinky finger up at a tea party!!

Annnnndddd don't forget the lollies for Miles!!!




















A celebration wouldn't be complete without playing Hi Ho Cherrio!!!

A soak in a tub full of warm water!

And reading a fun book!!

Leo asked if I pulled the car seat up so far because I was old.

I pledge allegiance to the flag

"I pledge allegiance to the flag
of the United States of America
and to the republic for which it stands,
one nation,
under God,
indivisible
with liberty and justice for all."
With hand covered hearts, several thousand citizens of the United States of America, in Salt Lake City, Utah, in the tabernacle on temple square, at the Constitution Day Concert tonite (September 18, 2009) declared their allegiance to the country our flag stands for. Never have I had the experience I had tonite as we made that pledge. It was as if the founding fathers themselves were witnessing God's hand in creating the seed bed for the freedoms and privileges that have made this country free and great. I tingled from toes to the top of my head and then the tingle flooded over through my eyes -- their witness kept resounding and resounding through the pledge of the voices of those in attendance. The world's choir (The Mormon Tabernacle Choir) was inspiring as always with their 6 rousing patriotic songs. Governor Gary R. Herbert encouraged us to do our part in sustaining and upholding what our fore fathers struggled to create. God bless us all with the knowledge and strength to do what will keep our country free.

What a fun thing -- the Utah State Fair. Too many things to see -- too little time to see them all.
